The newer musous had major improvements, in Samurai Warriors 4-II grunt enemies group to attack all at once, enemy officers deal some real damage, it's the first time I ever felt any difficulty in a Warriors game in normal difficulty.
I hope they go with that trend and make the game brutally hard and have Samurai Warriors's speed and polish.

You've never read the manga, have you? Guts swings around Dragonslayer like it's nothing.
Souls wouldn't fit, far too slow and plotting. Guts swings his massive sword around like it's a feather, it just wouldn't fit.
Musou isn't going to fit because Guts in on a level beyond basically all the other humans in the story. Having other playable characters who aren't Guts and having them balanced out with Guts just isn't going to be faithful to the source material. He's matched by Apostles and Magic users, not by other fighters. Obviously the niche they'll try to carve out for him is the slow attacking heavy hitter with a lot of knock back but in the Manga Guts is also the fastest and most dexterous guy around, he's fucking OP as fuck and has maxed stats across the board, it's just not fair.
The closest thing you could do to Berserk is a Devil May Cry clone since there you can have large groups and you can have boss fights and Guts doesn't have to be balanced with all the other humans.

One lengthy combo, and one retarded "I can lock onto the enemy, but I only swing forward instead of tracking them" combo, and both can be switched between for more elaborate combos. Also Guts will have different animations for the situation IE changing the direction of his swing to behind him or a downward thrust to the left after 3 swings forward

You do realize how hard is to balance a game with 40 characters around you attacking, right? If they did attack as much as you'd expect you would just get stunlocked and die left and right.
The grunt enemies are fluff, they're not expected to be a challenge, that comes from the officers and the drawn out battle and objectives, the grunts are just there to keep you busy and having some easy satisfaction of "doing something".
Berserk is very hard to adapt into a game, because either the enemies will die too fast or you will, Guts kills many enemies with one swing, so if you try to make all those enemies react, the game would be punishing and "wouldn't fit the narrative" that Guts just slices weak enemies away.
In a Berserk game, the challenge should come from overly long battles and boss fights, not just killing random trolls.
