There's nothing entertaining beyond the story missions. I played all main GTA's, from the first to V and this is was probably the most boring experience i ever had in this series. Your character dies too fast thanks to the "realism", taking all incentive from creating mayhem, driving is arcadey and extremely easy, removing any tension from driving around, police teleporting and pinpointing your location, apart form IV already fixed this issue, the pedestrians are boring since nothing relevant happens to them, fist fighting is boring, no Euphoria makes messing with them also boring. I really miss the lock-on shooting mechanics from SA and the Stories games. In my mind, GTA should be played with a controller since vehicles are such an important part of the game, put the shooting mechanics in V require actually aiming, which would be way better on PC with a mouse and keyboard. Unless you want to constantly switch between controller and keyboard, or just be stuck with shitty aiming on a console, lock-on needs to be an option.
