Twitch shooter: 120hz with low persistence (like nVidia ULMB or BenQ Blur Reduction)
Standard shooter: 120hz
Racing games: 120hz

Figthan gaems 60hz (fast enough for 120 but frame targeting and shit exists in competitive play)
Platformer: 60hz
RTS 60hz
Tactical, slower paced shooter (ARMA, Squad, SWAT...) 60hz
Open world 60hz
Flight sims/games (combat): 60hz

Turn based: 30hz
Strategy/management 30hz
Flight sims (commercial planes) 30hz
MMO 30hz

Really depends on the game. In racing sims I just can't play below 120 because you lose out a lot of information about what the car is doing and will make more mistakes. Even if I can't immediately tell the difference between 100 and 120 just looking at a replay, it's dramatic when actually cornering

hz means "Hertz" which is just a generic measurement of frequency (1 per second)
In monitors hz is how often the physical screen updates, FPS is how often your graphics card renders a new frame and sends it to the screen. So they're not linked unless you use v-sync, and a 144hz screen is useless if you only reach 70 fps in games anyways
