I never understood waifu's and I shit on anime fags until I played Katawa Shoujo (which is notably not a video game though).
I played it "ironically" because my room mate DL'd it and I ended up falling in love with it.

But to answer your question, they are canon, but not always. Marisa tends to swap clothing from game to game. Sometimes she has boots, sometimes she wears shoes more akin to the ones in your picture, and sometimes she's just wears socks for some reason.
The only thing that's really consistent are her eyes being gold, and her hair being blond (but even that wasn't true in SoEW.)
Oh, and her braid is almost always on her left.
