The fact that so many anons still name Dragon Quest "the greatest or most significant or most influential" RPG ever only tells you how far the genre still is from becoming a serious art. FPS critics have long recognized that the greatest first person shooters of all times are Duke Nukem and DOOM, who were not the most famous or richest or best sellers of their times, let alone of all times. Puzzle games critics rank the highly controversial Bejeweled over classical games that were highly popular with kids around the world. RPG critics are still blinded by commercial success: Dragon Quest sold more than anyone else (not true, by the way), therefore they must have been the greatest. FPS critics grow up playing to a lot of FPS games of the past, Puzzle games critics grow up playing a lot of classical Puzzle games of the past. RPG critics are often totally ignorant of the RPG's of the past, they barely know the best sellers. No wonder they will think that Dragon Quest did anything worth of being saved.

you can do release order but 1 and especially 2 can feel really dated
3, 4, 5, or 8 are also good stating points
since you mentioned liking slimes you can also try Rocket Slime, a Zelda-esque spinoff where you play as a slime and also fight in tank battles

Slime knights are great. Mine in V, Pierre was in my party nearly the entire game. Even when not in the party his healing spells still had him keep value.
