TW1 is unplayable to some people, the best gameplay in the series to others. The atmosphere and story are great, but the voice acting is horrendous. If you don't like the gameplay, just god-mode your way through it.
TW2 is like the Mass Effect 2 of the series. Doesn't have much to do with the "main" storyline, but it still really enjoyable. You'll want to at least play 2 so you get an idea on the world's political situation.
TW3 is really good and about 100 hours longer than both older Witcher games. Most of the quests and dialogue will be referencing the books and previous games. Those moments are 10 times better when you don't go on a wiki to find out about them.
I did the same thing, got it half off on impulse without having played the first two. I still loved it, going into some of the dialogues blind actually kind of enhanced the experience for me. You'll pick up on the story and whatnot as you go. Just get it while its on sale

In terms of understanding the story and characters you'd get a lot more mileage out of reading the books. Ciri and Yen don't even appear in the previous games.
