What I did was enchant an amulet or ring to fortify enchant 1400 pts for 1 second (MCP allows for 500pt enchants and you can repeat the same one multiple times). Same for alchemy.
Then I cast that shit and immediately go into my inventory to enchant or mix potions.
Alternatively, the normal and quickly game-breakingly-OP way is to make fortify intelligence potions while drinking them so you can make increasingly strong potions. This way you can boost your intelligence into the thousands and create insanely strong potions that last for weeks.
Keep in mind this removes most if not all difficulty from the game, so it's not recommended for a first playthrough.

You have spell absorption, so you can summon an Ancestor Ghost, aggro it and just absorb the spells into magicka.
I would just create my own class. The predefined ones are all not really ideal. But the game isn't really hard so even with a non-ideal class and non-ideal potential stats you'll do fine. I would advise against minmaxing as it takes the fun out of the game a bit, at least for me it does.If you want the maximum amount of potential magicka, pick an Atronach Altmer. Altmer have a 2.0x INT magicka modifier, Bretons 1.5x and the rest (iirc) just 1.0x
Morrowind is practically my happy place. There's just something comfy and relaxing to me as I explore the bizarre lands of Vvardenfell. I always feel excited about what kind of stuff I can find in caves and ruins. I also seem to find something I missed the hundreds of other times I played in every playthrough.

Sure, any armor class is fine. Only really matters in the beginning anyway, as you can train any non-major/minor skill up to par if you have enough gold.

Although, if you're a mage you probably don't have a lot of strength, and hence can't carry a lot, so light or perhaps medium armor are the better choice. Wouldn't go with heavy armor as you will spend most of your encumbrance just wearing it.

Have long blade / short blade (whichever applies) as major skill. Make sure you don't have shit agility. Don't go into battle with low fatigue. It's basically that simple.

It's pretty good, but it does have a bunch of bugs and most of the individual mods that it contains have been updated since the last release.
It also does change the artstyle a bit so if you're going for a first time playthrough I would not recommend it. In that case just go with MGE and the code patch + patch project

Oh then go for it. There are some annoying bugs such as some doors being broken (they just rotate instead of teleporting you) and missing assets here and there, but there are patches out to fix it. I'm running MGSO with a couple of patches right now and I haven't really encountered any game breaking shit. And there's always the console to fix things.
There's nothing left to discuss, we have depleted both the in-game content as well as the lore. Everything else is mere speculation that's not even worth wasting your time over.

Atronoch is actually my preffered playthrough, huge ass mana pool if you ever need it, absorb mana is both your regen and a really powerful shield.
Complete the mage's guild to claim the Warlock's amulet for another 25% and 1 Mana per second and you're essentially an unstoppable magicka burning killing machine.
Also works in Oblivion.
In both bases, works best if you're a high elf, making you weak to all magic and also giving you a fatter mana pool to work with, because the mana you regain from Spell Absorbtion is based on 2 things.
A) How much it costs
B) How much damage it would do to you.
So if you have shitty resistance to Magic, or in the High Elf's Case, WEAKNESSES to all magic, then Atronoch pays off double.

Never did the imperial cult, but you could do the main quest or join the fighters guild, mages guild, thieves guild or morag tong or whatever. Or joint a great house. Most career paths start off a bit slow, making you do simple shit like fetching stuff, but it gets better after a couple of quests usually.
And if you don't like the quests, just explore the world until you stumble upon something interesting. The world is loaded with stuff waiting to be found.
