The point is to show you want they want you to see while hiding everything that's unfinished, unpolished or straight up broken. The same applies to multiplayer "betas" these days, they're not really beta versions of the game at all, it's just a collection of what they want you to see with everything they don't want you to see removed.

No Man's Sky should be fully playable at this point in time, considering how close the release date is.

You might argue that if their game can be showed off entirely in 15 minutes it's crap but the demos are mostly there to check the gameplay, so 15-20 minutes on a planet with all the stuff you want to show off on it is good enough. They've showed 40 or so planets already, so the "it's all the same shit, just copypasted" doesn't really hold anything.
