For once, the Game Theory youtube channel actually had some interesting ideas on this, and I'm going to basically rip off them for this. The idea was that red is associated with aggression and other "bad" emotions, while blue is associated with calm and other "good" emotions. He went on to discuss an experiment done with giving monkeys food while the people offering food wore different colors, and the monkey always avoided red, always chose blue, and was neutral on green.
This translates to us, and it's theorized that it affects us in games too, for the same reasons monkeys avoided the person wearing red. Because instinctively we associate red with bad things that we want to avoid or kill.
I unironically recommend finding and watching the Game Theorists video on team colors in gaming. It's actually one of the more interesting things he's done that has some stuff backing it up that isn't clickbait garbage like the "Is Sans actually Ness" bullcrap.

Red is often used to show hostility or danger, such as red eyes, devils, lava, etc. Blue is a "calmer" color and would thusly be better suited for something that will not harm you, although there are exceptions.
