I do the same thing with this weird external video card dock I bought off banggod. My asus laptop has a really nice cpu in it but a shitty gtx 965m, but it also has a secondary mpcie port for some reason. Honestly building anything sub 500 is going to be a major challenge. Even then having something that'll run games at 1080p and greater than 30 and at least 60 fps will be a hit and miss. You also have to factor in parts such as a case, monitor, mouse and keyboard and OS unless you already have those parts. I'm not saying you should go for expensive but for reliable.
