Want my opinion?
Stage one to four of most mainline games are fun, not many things to memorize, stage 5 and 6 need a bit of trail and error though , to complete the game without continues

Bullet hell wise, Touhou is not that hard.
I play on normal and hard mode because I like a challange, but dont like (Trial and error x1000000) AKA lunatic mode.
Also fighting games of the series are cool

Give it a try, I guess

And the fandom memes up the characters. Cirno, is actually not the strongest character ever, she is one of the strongest fairies in the series, bur fairies are still weak as shit.

I have not played too much 2hu but the way anons talk about it on /v/ they tend to say things like "Hard mode is actually the hardest difficulty, ZUN balances the challenge properly for Normal and Lunatic but Hard doesn't get as much attention so there's weird shit". What do you think of that?

You have to realize that like 90% of people who post Touhou on /v/ don't play the games.
I actually thought Touhou looked kind of awful too, but the I actually tried the games out and they're actually pretty damn fun. I would suggest giving Embodiment of Scarlet Devil on Normal a try. The games aren't as difficult or memorization based as they appear, honestly. I mean unless you suck like >>342035128

Hard mode from 10 and up is harder than Hard modes 6-8, but there is not a single game where Hard is harder than Lunatic. Occasionally you get single patterns that are easier on Lunatic than on easier difficulties, but that's fairly rare.
