Buy base CK2 to get access to the mod forums.
Then pirate it with all DLC and play mods like The Winter King, AGOT, Crisis of the Confederation and HIP. You'll thank me.

They're both good games. CK2 is better for essentially roleplaying as a single dynasty and involves lots of immersion and shit, while EU is more grand strategy with nations fighting nations and colonisation and stuff like that. I prefer CK2 since there's nothing better than playing as the Byzantine emperor, castrating and blinding your rivals and fighting off constant civil wars while watching the world around you change. Being in charge of a nation a la EU is just not as appeal to me, it's too impersonal.

icewind dale is literally baldurs gate combat except with much worse characters, writing, story, and setting
DS3 has two billion balance issues that the developers refuse to fix, plus it doesnt have the replayability that DS1 does
