Kain is a more compelling character overall. His commentary and smugness lend a lot of charm to Blood Omen and he made for a fun antagonist in SR1.
Fuck SR2 and everything after it, though.
Kain manages to influence destiny despite being bound to it. Raziel who's supposed to be only creature free from destiny is constantly being manipulated by everyone, including Kain.

No, Kain was always bound by destiny, but he saw in chronoplast a future where he could create Raziel, free from it, and by giving himself in to the blade Raziel untangled all of destiny, giving Kain power to change future and kill the squid.

Raziel can be quite bitchy sometimes, but he is allowed to, his life sucked ass since from the start. He tends to be more introverted than Kain and it's almost endearing how he just wants to find someone to TRUST.
That said, I think Kain's wit and struggle against destiny are great. It's really hard for me to decide, they are both wonderful characters.I love Janos too, to be honest

Me too, but even if Amy was still working on the series and everything was fine, I doubt they would have made Raziel speak through the Reaver: his existence inside the sword is pure madness and pain and he probably isn't even aware of himself anymore.

That comes later, maybe in another millennium. I like to think that maybe the cause of reaver-madness before was a result of Raziel not being purified yet, and succumbing to de-evolution like his kin, just in a different way. Maybe now he'll be alright - at least for as long as he's being used for a purpose he can fully get behind. Or maybe it was all supposed to end with Kain placing the soul reaver in Avernus to await his past-self, knowingly condemning Raziel once again, to a hell of solitude.

There was definitely room for another game. Defiance left a lot of loose ends and room for elaboration. But I think the core of the story was kind of over. On a thematic level Defiance is fairly conclusive on a thematic level.
To be honest I never really thought the plot (or the gameplay) after the first Soul Reaver justified its bloated pretensions. That's probably why I'm more tolerant of how it ended. It was a rare occurrence of the series exercising restraint (however unwillingly).
The only LoK game I really love is the first one. SR was good, not always great. After that it was a big nosedive.

All of them. People often go about BO2 being black sheep of the series because of the story, but even that had lots of fantastic gameplay and design elements to it.

They're all pretty connected plotwise so if you're just wanting to play a game or two stick with either Blood Omen or Soul Reaver 1, those work well standalone.

They were working on the sequel to Defiance, Dark Prophecy. It was supposed to show Kain finally defeating the Hylden and the Elder God, restoring Nosgoth, and wrapping up Janos' story still trapped in the Demon Realm.

This. I would have loved to see the series finished: this way nobody would have felt so eager to see another game churned out in this shitty vidya industry. Even if they make a new game to hush the fans, it will never be good without Amy or at least part of the original team.

The gameplay stopped emphasizing exploration, which was the draw of the games. But not only did the gameplay take a backseat to the story, the story got worse too. Dialogue remained hammy fun, but the plot grew more and more self-obsessed and soapy. It was just dull.
I think the first Blood Omen is by far the best. I wish SR's original ending came to fruition instead of the cliffhanger and subsequent clusterfuck we got.

Disagree about the story but I do agree on the gameplay, it was really disappointing how little SR2 had to explore compared to SR1 with all its optional areas/powerups to find and how the games became progressively more on-rails feeling.
