Everyone memehates Diaz but I think it was a good idea. If we're really concerned about her wielding the Master Sword, maybe she only has it for the portion of the game that she's trying to get it back to Link, after which she uses one of her light arrows as a sword (doubles as a Cool Upgrade). And if half her deal is to find Link and get him to nut-up and fulfill his third of the triforce prophecy, that's not THAT much of a detour from her other roles.

In nearly every single game Link removes the Master Sword before receiving the Triforce of Courage. Many times using it to it's full potential long before receiving as well.
At best, only the one with the spirit of the hero could use it, but you may only need to be pure. We don't know how it works.

People who claim that Zelda's somehow more acrobatic or has better magic don't seem to play many Zelda games in general. It's really hard to justify having Zelda save Hyrule when Link's around. And if Link fails or doesn't show up, it usually tends to end really badly.

She usually doesn't, though. In fact, most Links don't have much physical help. The only time Sheik helped Link beyond cryptic nonsense and giving him a new song was when she saved Ruto.
In the original Legend of Zelda, Link's completely on his own.
In The Adventure of Link, Zelda's sleeping and, again, Link's completely on his own.
In A Link to the Past, Zelda does fuck all.
In Majora's Mask, Zelda's greatest contribution is giving Link the Ocarina. Beyond that, the most help he has is from the Happy Mask Salesman who teaches him the Song of Healing and Tatl, who gives him pointless advice.
In Wind Waker, the King of Red Lions gives him tremendous help as a form of transportation, as well as giving him direction in his journey. Tetra helps in similar ways as well, though her pirate crew eventually becomes fairly pointless.
In Twilight Princess, Zelda spends all of her time in a tower. Midna helps similarly to the King of Red Lions, giving Link advice, direction and assisting him in various ways with her magic. It's the most amount of direct help any character has ever given Link.
If Sheik actually helped behind the scenes, it would diminish Link's own efforts, or make that particular Link seem less impressive than others due to needing someone to make things easier for him.

But it seems that Anouma realized that SS did indeed do some things wrong and they want to try something new.

It's hard for Zelda to get to do anything when Link exists. The guy's born with superhuman reflexes and skills. Put a sword in his hands for the very first time and he'll be a complete master. Strong, quick, acrobatic, masters any and all tools he obtains instantly. Destined to wield the Master Sword and save Hyrule whenever it has need of his services. He's basically the last line of defense.
In order to justify Zelda starring in a title rather than Link, you'd either need to have him fail (in which case everything's probably fucked anyway) or have him not show up at all, which wouldn't make much sense. Unless the problem isn't really that big to begin with and thus doesn't justify summoning Link.
I'd prefer a Ganondorf game.
One where you run around to all the different dungeons, and kick the living shit out of the "dungeon guardians" and bring them under your control. Then after you takeover whatever dungeons you want to you go and try to take over and fortify Hyrule against Link's eventual onslaught. The faster you complete the dungeons, the more time you have to fortify against Link (since Link'll have to "take back" the dungeon you conquered and defeat the "dungeon guardian" you've converted to your side). Complete with options for a Melee-based, Weapon-based, Magic-based, or mixed Ganondorf build, or evenTransformation-based.
I really don't have any feelings towards Sheik one way or another. I mean, if they announced a game with her and it was good, I'd play it, but if they canceled it before release I wouldn't really be sad. Not happy, but not sad either.
