Third person. I like to see my character move around and I prefer the camera pulled back. I like playing racing games in first person, though.

First person for ranged
It's easier to see your surrounding and promptly fuck shit up in melee when in third person
it's easier to aim when in first person and VATS whips you into first person anyway

Third person is actually more realistic than first person, given you're not zoomed out a fuck ton. In real life you don't see everything through a box. You have peripheral vision and also the sense of where your body parts are. Third person basically mimics that to a degree.
