Where you've got a whole bunch of stats and you choose three to increase, the amount of the increase being proportional to how often you used skills that were dependent on those stats. Way better than the perk system imo. Especially since the main bonuses you got from perks you get in oblivion periodically for reaching certain milestones in the skill levels

Oblivion is my least favorite vanilla Elder Scrolls game purely because of how they handled leveling and scaling. I like to go with pure power playing when I play Elder Scrolls which means hitting max attributes and skills as fast as possible. Because of the fucking 5 trained skills per level bullshit you have to level just about everything by hand and it takes fucking forever. Getting Speechcraft to max level without training any points in it is literally hours of clicking in a circle at a guard. At least in Skyrim the skills leveled relatively quickly and in Morrowind you could just train shit to max if you had the money. Oblivion tore my soul out trying to get everything maxed legitimately.

That's probably in large part because in Oblivion, you don't have some transcendent special quality about you. You're just a highly-skilled adventurer who gets caught up in the game's events. That makes it easier to roleplay a more "normal" person, because like you said, you don't have the pressure of some huge cosmic destiny hanging over you all the time.
Plus, Oblivion's world is just generally more pleasant and comfy than either Morrowind's or Skyrim's worlds. It feels like a classic fantasy world, maybe even slightly fairy tale-esque, so it's easier to do things like eating because you feel like you want to live in that world.
