Having played through both DaS1 and DaS2 recently, I would say its worth a play though, but 2 is really unfair with its tracking and hitboxes. For example, mimics will still grab you even if you are on their side.
2 looks and feels the best out of those two games, and the 60FPS is nice, it is not as well put together as the first game but worth it for the sheer amount of content alone.
SOTFS is honestly the best coop dark souls experience, get a friend and do the entire game together

I just beat it yesterday for the first time, vanilla on PS3 with no DLC (saving that for when I do SotFS) and it'sokay. Doesn't stack up to Demon's, Dark 1, or what I've played of Bloodborne, but it's still pretty good in its own right. My main complaints are

Dark Souls 2 is the worst game I have ever played. I would literally rather fuck a handful of broken glass than play that game. I would rather circumcise myself with a blunt knife than play that game. I enjoyed DS2 the most out of the series, mainly because of pvp invasions.
The new DS3 invasions really force me to meta in order to take care of gank squads. I felt like DS2 had a lot of versatility in builds, I spent a lot of time in the blood covenant pvping and testing builds. I mean DS2 has its meta too but DS3 pins 3 to 4 phantoms against you with some pretty bad netcode. Not to mention those phantoms can have an extensive list of weaponry which makes your build kind of obsolete. I mean DS3 still needs its xpacs, I think they will be able to make up for it.
But for an overall pve experience it's DS1 in my opinion, and lots of bosses are fun to solo in DS2. I will be trying Bloodborne in the next week or so, very exciting

The video you posted is about a latency issue present in all the souls games, not a hitbox issue. From aren't wizards; they can't make their multiplayer game run faster than the speed of light. Because of the lag-compensating mechanics in the game, lag becomes a problem for spacing (the phantom hits shown in the video you posted) not for actual colision and hit detection. The solution is to ignore spacing between you and your opponent and roll/block assuming they're close enough to hit you.
So just to reiterate, it's a latency issue, not a hitbox issue.
In the time DS1 has been sitting in my backlog, the devs release two damn sequels and some DLC, so I get the impression that this is turning into a yearly franchise.
I remember all the hype around DS1, then DS2 hit and people seemed a bit disappointed. With DS3 I don't even know what people think because there's not enough buzz to judge.

Connecting with other players is a lot smoother than ds1. It's very easy to summon and be summoned by random people but a little more difficult to connect with friends thanks to how soul memory works. If you and your friend start a new character at the same time and only play those characters when you plan to play together there's no problem, but if one of you gets too far ahead of the other the person behind will have to grind a bit to raise their soul memory to be in range with yours.

Even with Soul Memory it's still easier and quicker to connect with friends than unmodded Dark Souls 1.

You can burn a human effigy (same thing as ds1 humanity) at a bonfire to block all invaders for 30 minutes. If you get killed by an invader you get the same effect, 30 minutes of blocking all invasions.
You can join the covenant of the meek which will automatically summon a blue sentinel to defend you when you get invaded. Scaling works differently in ds2 so low level invaders with overpowered high level gear is much, much less prevalent.
Also if you're summoning a friend and between the two or three of you you can't beat a single invader that can't estus (while you can) then you deserve to get rekt. Also you could try manning the fuck up and not having a cry when you get invaded.
