Unreal's arsenal is pretty fucking great, but I prefer Doom
I can't even think of any Quake weapons besides the nailgun or Quake 2's railgun
If we were to count ALL the guns from ALL the games in each franchise, I think Unreal would win
But then again, almost every weapon at some point has been ported to the DOOM engine, so...

UT for sure. It's the only one with alt fires, which alone sets it far ahead, but the weapons are cooler anyway.

UT has the funniest guns, but Quake is better because of the sum of its part even if the weapons aren't as exciting
UT no contest, it has the most, each has two types of attack and some can even combine both into special kinds of attacks.

Unreal has some great ideas and gimmicks but Quake has the more useful, utilitarian and best sounding weapons.
