Third person view is more immersive: since you can't feel the orientation of your character's body and obstacles you might bump into, you at least get to see them, and since the camera is very close to your back, the total field of vision is closer to what you could actually see (without restrictive helmets, at least) than the first-person view.
I do sometimes switch to first-person mode when aiming lances or bows, though.
