Gwent is a lot of fun, but it's anything but balanced. Some decks are horribly one-dimensional like Monsters or Skellige, and the best and easily exploitable strategy is massing spies and decoys to starve out opponents. Half the fun of gwent was assembling a truly powerful deck from a weak one from the start, which mirrors your progression. If gwent turns into a PvP game I feel it will lack this growth which made it so fun.

Witcher 1 might be one of the worst games ive ever played. I tried playing it when I was sucked in on witcher lore but I couldn't keep playing. It contains so much backtracking and really awful mechanics.

It might work if they set it hundreds of people in the past when there were monsters all over the place and all the Witcher schools were at their height of activity. But that wouldn't solve the basic problem of MMOs are simply outdated and people don't play them like they used to.

Witcher 1 remake would be a terrible waste no matter what in my opinion. If they're going to re-do it completely from the ground up I'd much rather have a new game with new content. And if they're just touching it up visually it'll still be a pretty tedious game.
It's not like playing it (if you couldn't stand doing it originally) is going to somehow give you the complete Witcher story anyway.

Storywise it's OK, but combat sucks, the environments suck and it's a grindfest. It's an single-player MMORPG to a large extent.
Also the writing is often pretty crummy and lacks any kind of finesse, at least in the English version. Witcher 3 was huge improvement in that regard (Witcher 2 still suffered what looked like non-native/translated language with tons of bad grammar and typos in the journal/glossary sections.)
Make a game set in the Witcher universe where you aren't locked as Geralt the bastard fighter/mage and I might be interested

The game has boring combat, awful voice acting and the graphics were good for a 2007 game, but look like shit now.
While TW2 still has somewhat of a serviceable combat system and the graphics were pretty much up to date even 2 years ago (how many games from 2010 looked and played that good? It was an amazing looking thing), the first entry in the series won't recieve much love nowadays.
