In Morrowind, you can steal any object and sell it to any NPC. If you sell it back to the owner, they recognize it and report your crime, then try and slap your shit.
In Oblivion, you can only sell items to designated Fence NPCs in the Thieves Guild who have no money.

There are a lot of ways to do that quest, but a really easy one is to provoke the lord. He's alone in that house so no one will report the crime. Try to pickpocket and you'll probably fail, and he will start attacking you. Fist him or use Drain/Damage Fatigue if you're a mage until you knock him out, and steal the key, then run off in to the night.
I believe he's involved in another quest later so you'll eventually want to learn Calm Humanoid and go back to chill his ass out.

Yeah you do it at NPCs and the soul gem / soul are important. For Constant Effects you should use a Grand soul gem with a Golden Saint soul in it. There are a few other good ones but I can't remember off the top of my head.
You can enchant any effect that you know as a spell.

You can pay NPCs a lot of gold for it or you can do it yourself with Enchant skill by dragging a Soul Gem on your character in the inventory. But the success chance is so abysmally low even with high enchant skill that you're practically forced to use the alchemy glitch for intelligence boost and savescumming if you want to do anything that's not shit.
Constant effects can only be done with souls of Golden Saints and Ascended Sleepers, both are in leveled lists and only start appearing at level 20+ but you can bypass that at low levels. I know of 2 Golden Saints that are always there even at level 1, and you can capture their souls to make an amulet which summons Golden Saints to give you unlimited souls even before they start appearing normally. You don't need that big souls for those amulets, but it gives them more charges.

No. Sneak is worthless unless it's 75+, so for the first half of the game you're going to be a weak combat character.
Pickpocketing is useless. You can steal a few paltry items from low level characters and that's it.

Khajit thief is really fun, one of my favorite playthroughs back in the day was one of them. I took Acrobatics as a major skill and styled all over s'wits with my ten foot jump and nonexistent hitbox.

Not sure if you're serious since you chose the best race for being a thief, but yes.
Sneaking is quite difficult early on in this game. If you really want to do it from the start you'll probably want to be a Khajit or Bosmer and set it as a major skill.
More realistically, you'll want to do some other things until you can afford training and get Sneak to a reasonable level.

I wouldn't really think it has anything to do with the registry. I have like 8 copies of Morrowind installed and never had any problems.
Where did you install it? If it's in Program Files or Program Data or something, try installing it elsewhere. Something like C:\Morrowind or C:\Games. The game can suffer from permission issues if you install it to the default location on Win7 or higher.
