It seems pretty typical of Bioware to be lazy and unimaginative in this area. For every instance Bioware claims to be progressive they have some of the most hammy and stereotypical writing you'll see around.
There are so many different directions you could take a EDI/Joker romance, but they went for probably the laziest one of all. I guess it's okay if you like sex robots though. The whole thing comes across as if Bioware couldn't write a romance between a AI and a human without EDI having a human looking body, like they couldn't imagine it working otherwise.
I can't be mad though, there are so many problems with Mass Effect that the whole EDI sex robot thing is just a symptom of Bioware's ham handed writing staff. Like how Bioware can't write a gay character without their sexuality being pivotal to their character.

They also made her objectively less interesting and less important. In ME1 she was very much the odd one out on the Normandy, she was a talented biotic but very much there because of her Prothean research. Her personality was also interesting, quiet and reserved in a ship of loud and tough career soldiers and the like.

Garrus looked up to Shepard and wanted to emulate him, taking on the paragon or renegade lessons you taught him in his approach to fighting crime in lawless space. VS was annoying because the dialogue railroads you into being unable to say anything logical to them. Wrex figured that the only way that the Krogan were ever going to get back on their feet was if he gave them a strong leader, and Tali returned to the fleet and shlicked to Shepard every night or something.
Liara somehow turns biotic abilities and being really good at picking through ruins into digging up dirt on very much living people and selling it to the highest bidder, and was so good at it that she became one of the best out there.
