Was anyone else disappointed that the NPC's almost never addressed your character's race, and your race had no effect on the quests whatsoever?
My first playthrough was a High Elf character, and I thought I'd join the Stormcloaks just for shits and giggles. I was expecting some kind of "A traitor to your own kind? That could be useful" dialogue bit, or at least some hostility from the Thalmor-hating Nords, but I was able to walk right in like I was just another fucking viking.
I hope the next game does this better, or at least makes an effort like Oblivion

Enemies are massive bullet (blade?) sponges and do a bit more damage but all you need is a shitload of restore health/stamina/magicka potions. Otherwise you'll end up running out of resources before killing anyone and have to run around for a few seconds waiting for them to regenerate.

Well... you could attempt to every quest in the game, but then you'd be an old man. After completing your Alliances areas and the main story, then you are warped into the starting area of one of the other Alliances, and the quests are all scaled to your new level.
So after you complete all the quests in every area, for every Alliance, you could take a crack at the DLC which has some different arena modes, or the raid dungeons. There is a ton of content in this game, and I can't actually answer your question properly because I havent seen it all for myself. And I've been "end game" for months now.
And yes, the questing endlessly does get wildly grindy unless you are entertained by the stories.

But Npcs do mention your race. The dark elf woman in Windhelm mentions you, if you play as a dark elf, guards usually call you differently if you play an Elf/Kha'jit/Argonian.
Even the Imperial woman at the start of the game calls you a fucking cat, lizard depending on your race. Ulfric mentions you differently depending on your race when you first join the Stormclocks.
