Getting stunlocked/flashbanged/grabbed/thrown/frozen/silenced/blinded/whatever is anti-fun, but gives games depth and complexity, which is more fun for people who want to invest a little time in it.
Mei is unfun because she can go immune, throw up walls, and freeze her opponent; four of her five abilities focus solely on making the game unfun for other players.
Of course, she's easy to counter and hard to be good with, so it doesn't really matter.
I wouldn't mind if they increased the time it took to freeze you and allowed you to turn at full speed until completely frozen. Then the retarded low cooldown on ice wall, the heal on her ice block, all that shit, would be a bit more bearable. Christ, I'd be fine with them increasing her damage a bit, just as long as you can continue to turn at full speed as she's walking circles around you.

Never thought about that. With TF2's Engie, you had to build, repair, and upgrade with scrap which usually kept you busy. Here, it's just: press button, place turret, smack 5 times (assuming not under fire), smack more as need for repairs, and wait for Molten Core to build. He never needs to move to scavenge unless he wants to armor up the team (or himself usually) The scrap mechanic just feels like an afterthought they slapped on to give him some team utility.
As for being able to slap down another turret the second it breaks, how about a 5 second cooldown on destruction?

Most characters can survive his combo so easily unless he is flashing you with the help of hearing your steps or active wallhack from one of the snipers.

McCree can throw the stun on the ground instead of directly at Genji, and it won't block it then at all. Doesn't even have to be behind him, so long as he doesn't directly block it before it explodes.
McCree's stun+fan+roll+fan is 3 different hits for Zarya to have to shield, and if she didn't shield the first one, she can't shield the rest. If she shields the first one, they not only have the option to not attack while she tickles them, but they can straight up fan+roll+fan still and do more damage than her shields AND full health with bullets to spare. And if she shields someone else, it's usually even worse because they'll probably have 200 less health than Zarya.
Mei is hard countered by McCree. His stun comes out faster even if Mei gets the drop, and his revolver is better at a distance because it does more damage, shoots faster, and is hitscan.
Also good fucking luck just shooting slow projectiles from out of stun range giving all of the time in the world to move out of the way, their travel speed is shit compared to his hitscan, and doing 35-70 damage with pinpoint accuracy is easy as fuck.
Like fuck, man, the damage and accuracy on his revolver is unreal. The absolute least damage it can do is 35 on a bodyshot from very far away. That one shot is equal to landing 7 of Soldier 76's shots at an equal distance, or equal to landing 2 shots of Soldier 76's point blank.
