I think it's because, for a long time, Europe was stuck in a muddle of unproductive changelessness. There were centuries where life was pretty much the same for one generation after another; the architecture, the institutions, the food, the sickness, all of it was one slog after another until someone finally decided to tell the Pope to go fuck himself.
In other words, because the same kind of architecture, caste systems, etc were used for many centuries, they're kinda timeless. You can't say they belong to one particular era or another.
But I'm all for injecting fantasy into modern elements just to see what happens. Lots of authors have done this.
