Don't get shield, learn how to roll away and most importantly when he backs away 2 times and tries to buff himself just run straight to him and beat the shit out of him to interrupt it. He is easy when not buffed or buffed 1 times. So just learn how to evade hus initials attack and two hand your weapon. I'm not that good at souls games but I managed to do it like this.

Have you done Ariamis? Farming souls takes no more than 10 minutes for a +15 upgrade.
If you have Dex run you can go for Great Scythe or Uchigatana +15 those a fucking god like on Dex runs.
You could also try using Pyromancy, if you have high Dex it should be easier to land than Magic spells.As long as you hvae the good pyromancies, of course.

It took me forever but i finally beat him earlier today after around 18+ hours of trying.
I had to constantly use green blossom and strong magic shield to keep my health and stamina up.
keep your shield up at all times and tank his hits until he does a thrust, circle him as he makes contact and hit him once, repeat until he powers up. when he is powering up you have a short window to hit him to stop him buffing. 3 melee hits are required to stop him from buffing, if you aren't close enough to him, don't bother attacking and use the time to heal/buff yourself.
Alternatively, if you have throwing knives, 2 knives are enough to stop him powering up and obviously can be used from a further distance at the trade off of dealing less damage.

The trick is to kill the dogs first. How to do that is an exercise in fucking insanity. I tend to see if i can try and dodge them up the stairs, then kill them as they run up.
Once they are dead the demon itself is almost laughably easy.
