The learning curve to this guy was the same as with Manus for me. After 5 or so tries I understood that I have to stay in front of the dragons head and learned to evade the few attacks. Second phase was about the same. In the beginning I was too cautious. Circling around him and hitting him 3 times with Uchi got him staggered I think. But mostly just learned the timing for rolls and openings. It was pleasurable for me, never got frustrated and with every death I felt that I learned something that helped me kill him.

I found blue Smelter was way harder.
Firstly because reaching is boss gate was ASS. Could not dod it. Had to get rid of the respawns.
Secondly because that small room makes you battle the camera more than anything and he has huge AoE attacks.
Everything Fume does is easy to dodge and by second phase he has that red wave attack that's easy to predict and even easier to roll behind him. Literally a "Fucking hit me now!" attack.

I found Dancer to probably be the hardest boss. Her movements were just the most hard to read, the least attached to any kind of readable physics. She's just slow then SUDDENLY fast, and her limbs seem to stretch unnaturally to hit you where you don't think you can be hit. I'm with you man. NK was easy for the very same reason. His movements had weight behind them and consistency, and they were therefore much easier to read, and while he did have a few delayed strikes, once you saw them once or twice you could easily dodge them. The lightning strike fucking killed me like 4 times though fuck that shit.

Gundyr is certainly not the best boss in the game. I can appreciate his awesome moveset/hype music and shit, but from the two runs I've finished so far, parrying is the only way to actually beat him unless you are doing a quality or dex build. If you are running pure STR and have a big ass weapon like FUGS or a great hammer, almost everymove gundyr does has less lag than your R1, turning the fight into parry central/shield camping.

I wanted to stay unupgraded but the game itself has permanently bumped up my max upgraded item.
It's the only already upgraded item in the game, too, for whatever reason.
Once I hit NG+ I'm doing Yoel's questline, which'll force me to bump up 5 levels, so I'll go +2 and +1 boss weapons.
I'm not trying to stay in any specific thresholds - just trying to get a shitton of low level PvP, which has worked wonders. I stopped leveling once I got to the Watchdogs and have stayed there ever since.

I remember tons of people with gear like the Soul of Cinder's set and the NK's helm going in as a Watchdog on week 2, and just yesterday I kept getting Dorkmooned into the Undead Settlement against this guy using the Dragonslayer Swordspear.
Near release it was balanced by the amount of people bumrushing the game who were still new to it, but now it's all people that are good enough to stay at a low level.
It mostly fucks me over that all my points are in STR and DEX so I can try out all the weapons instead of in VGR, but that's also made me a better duelist. I made a Guts character to level regularly with and I've never lost a fight using himexcept that one time someone summoned me for the old demon king and left the sandworm alive with two invaders running around
