I just started playing Suikoden and it kind of fits the bill of a collectathon.
You have 108 "stars" to recruit, most of them will perform some sort of function in your base like blacksmith or innkeeper etc but every single one of them can be taken as party members too.
You also have to collect the 27 "True Runes" plus the antique collectibles and other assorted non-character base upgrades.
And that's all on top of the normal rpg gear.

Three Saint Beasts arc was the peak. Initially it actually seemed like Yusuke was a spirit detective, doing stuff like breaking into a spooky castle, busting apparitions and using spy gear. By the time Toguro came around it started to become more like your typical Shonen anime, with shit like power creep and Naruto fighting.
