Funny because the capcom grooves have mechanics borrowed from those shitty SNK grooves, had they not if one chose a CAP groove their characters would be immobile as fuck compared to picking an SNK groove.

Certain grooves have different mechanics. Some have regular jumps, dashing, rolling, while others have a hop, dodge, running. the super meters are different too. One can be the regular 3 bar meter, one can have stocks, one can be charged, custom combos etc. Basically to add variety in how the game can be played.
N is probably the best. All you're really missing out on is air guard, which is exclusive to C-babbies anyway.
Best is debatable.
N groove is the most fun.
This game pretty much shows how Parry is shit compared to Just Defend.

I don't like P groove yet, I just don't get it.
C,A,N and K groove so far work for me.
Rock, Maki & Eagle are fun for me right now.
I love all the combinations of teams, ratios and grooves with this game! So much fun! I wish it was online.

Each groove serves as a system for different playstyles and are based of mechanics from different Capcom and SNK games for example:
C-Groove: Street Fighter Alpha 3's A-ISM
A-Groove: Alpha 3's V-ISM
P-Groove: Street Fighter 3 Third Strike
Sadly I'm not sure of the SNK grooves but K-Groove is a hybrid of Samurai Showdown/Garou Mark of the Wolves
