They say 8 players but I really only see that being the case if you had everyone being minimum item level at level 60, I think doing them as 4 was always possible.
I two man them as a DPS/Healer combo, but I heard scholars are capable of soloing.

So guys I'm levelling my crafters/gatherers right now. One thing I'm really confused about is new gear for these classes. Do I want ANY of the 50 gear for these classes? Is there any way to get whatever the top tier was for lv50 easily? It seems like "new" gear doesn't come for these classes until 52ish. Should I just wait until then?

No, new universal gear for both starts at 51

No, the old 4 star level 50 universal crafter/gatherer sets are still a pain to craft and not worth it since the new level 53 gear is just as good.
The sub 50 stuff should be good enough to carry you into level 53. You'll have to keep your weapon upgraded at least. Otherwise just get to 51 any way you can then just buy gear off vendors or have someone make it for you.
