Whether you liked them or not, it was a unique part of her design which has stayed with her for over a decade at this point. Consider this; with Arc's vents removed, four of the heroines (Kohaku, Hisui, Arc, and now Ciel) all basically have the same hair designs. They're all short hair with bangs down. Doubly so now that they've homogenized Ciel's design and removed her U bangs which used to leave her forehead open.
Arc's vents were a significant part of her design which made her more distinguishable from the other heroines. The only main heroine now that has a slightly different hair design is Akiha, and that's simply because of the length. Her front hair is more or less the same as the other main heroines as well.

The art looks technically better, the design is inferior because it lost all of its trademark aesthetics.
The only thing which is more modern about it is the outfit (you still see a lot of hair in-take designs utilized in visual novels.) The miniskirt is something that people like to over-focus on, but the worst parts about her redesign are primarily in regards to her unnecessary face, hair, and body changes.
Homogeneity is bad. The redesigns are bad and unnecessary. No one was desperately looking for the changes they made.
Nasu/Takeuchi have taken a George-Lucas esque hammer to Tsukihime in regards to the unnecessary changes that they've made.
