Style, shields became useless in the late Middle Ages where full plate armours becomes commonplace. The redundancy is not worth it. Instead knights use bigger and badder swords that can be wielded with two hands to crush through the enemy's armour or outrange them.
The offensive use of a shield is nothing compared the reach and power of a two handed sword.

Use 2 weapons, though not dual wield.

A warhammer (be it 1h or 2h) to break bones and get rid of the skeletons or metal foes.
A greatsword to smite cleave flesh undeads, evil-doers and other foes.

Bonus points if your weapons are imbued in Holy light.

Basically, be a combination of Uther and Tirion

While swords are pretty and give off a heroic vibe, maces are the weapons of paladins.
Effective against armor and lighter builds alike, the mace is a terrifying weapon to behold, something to strike the fear of God into the hearts of your enemies.

Now for a knight-in-shining-armor, the lance is the weapon of choice. How else are you going to joust for your Lady and slay dragons on horseback?

Maces are more brutal because they crush . Crushing someone's face/hand/leg is way more painful than simply cutting it. Paladin's don't fight for the enjoyment of it.

A Paladin should not wield a mace/flail/morningstar unless if it's a fantasy world where everyone and their mother wears heavy armor, in which case it's justified. Paladins in WoW, for example should use hammers because the armor sets are on steroids.

To me I feel a sword is a better symbol of justice, particularly a double edged one. Mainly because it shows the duality of good and evil and portrays balance within the two. Týr, Norse God of Justice, wields a sword for this purpose.

They tend to fight other supernatural creatures like Demons, Vampires, Monsters and the like, as well, so in agree that they should have a sword or other bladed weapon somewhere on their person. You can play a mystic knight in dragon's dogma. They have magick shields that they enchant with elemental magic, and when you perfect block and enemy you release it, like fireballs/freezing everything/sucking out their life and adding it to your own. They can wield swords, maces, and staves in their main hand. The best mace in the game, Virge of Madness, when fully upgraded, is only 100 strength lower than the best warrior weapon, the Devils Nail, fully upgraded. You can also enchant your weapons with dark magic, so every swing hits 3 or 4 times. You can also enchant your weapons with elemental magick. You can draw runes and sigils on the ground that will damage any enemy that enters them, sucks them into it like a vacuum, or explodes. Finally, you can summon cannons that when hit, will shoot orbs of magick the same element as what your weapons are currently enchanted with. On console, it was possible to be firing so many orbs with particle effects that you could crash your console.
