They're predictable, like every fucking thing else in the Souls games, just wait until they attack, roll, hit them a few times, rinse and repeat. If they grab you your armour is fucked but you'd need to be retarded. A good rule of thumb: one handed weapon for human sized enemies, two handed weapons for monster sized enemies. Use something bigger.

Look closer, two of the screenshots you quoted look a lot crispier than the other two. Different players posted them, as if it wasn't obvious from their actual posts.
And the only mod I am using is DSfix. It allows to set custom resolutions, as well as apply AF and AA, although you might want to force these setting via your driver control panel instead.

Don't run past anything, stand your ground whenever possible and pick them off one by one, when you know a group's up ahead, walk slowly so you aggro them 1 by 1 or at least in minimum numbers.

Farm 500souls, go to undead merchant near the bonfire in undead burg, buy repair powder, after that power through unded parish and you'll find the blacksmith.Try fighting the black knights. Aggro them into an open area so you have mobility after clearing the lesser mobs. You might get something good.

The undead merchant is back in undead parish. On top of one of the buildings, there's a bunch of barrels. Break them and you'll reveal some stairs, and there's a merchant down there.
If you need a proper blacksmith though, you can go back to firelink shrine. Go downwards, using the elevator, and there's a man behind bars down there. He can also repair your stuff.

Regular ones appear when people drop shit in their world, which then floats to other worlds. If no one picks it up enough times, it turns into one of these crab things.
Red ones spawn if you die and lose a 10+ humanity bloodstain.
They give you stuff if you kill them.

Faith is mostly support, fun in co-op, but Wrath of the Gods is good in PvP.
