witcher 3 had a more open world and more traditional rpg mechanics alongside a very huge story.
bloodborne wouldn't work with what witcher 3 did in terms of story. bloodborne works because you're constantly unaware of the world you're going through: most people don't understand the story even if they beat the game multiple times. huge quest trees and lots of npcs would ruin the atmosphere.
witcher 3 excels at being traditional but the combat still is terrible. bloodborne is perfect in every regard minus certain little details like items not refilling after invading another world, etc.

Both Bloodborne and Dark Souls 3 have better gameplay and a more interesting setting. TW3 has a lot of dialogue and substories that add a lot of gametime, but it ultimately feels padded.
