Well I beat her so it's definitely possible.
BB was my first souls game and I played the old hunters on NG+ on my first playthrough.
Maria was the easiest boss in The Old Hunters. Laurence and Orphan though.

Parrying is a big part of Bloodborne, and it makes the game easier and more dynamic. I wouldn't say you're more skilled for beating bosses without parrying because you "can't parry for shit", but I respect you for having patience with some of the bosses that gave me so much trouble without parrying.
I beat her without parrying but that was just because I was going two-handed.
It's not too hard, honestly I prefer just dancing around with fast bosses.

Well I think I did pretty good for my first soulsborne game I beat most bosses on my own with relative ease(I accidentally skipped ebrietas and logarius because I played blind on my first playthrough).
The only one I really couldn't beat was Laurence and I never got to OoK, because the shark anchor guys killed me constantly.
