The console versions changed it to replaceable models and for a lower file size for more reasonable HDD space required for console players.
Even looking at the models of Project Diva and the Arcade ones, there's obvious differences in some proportions.

I played Future Tone at an arcade near here full of Japanese import cabinets. There was not an option to switch the models at any time. Even if I was confused when all the menus are Japanese.
This was the first Future Tone. I don't know if they changed that for the newer cabinets.

I just started playing it, its actually not. I'm enjoying it more than Project Diva 1, and there's actually some difficulty to the game as it has an extreme/expert mode.
The main problems of the game are that the songs are just too damn short, when you start to get a jam on you find that the song just ends.
Another problem is the PV's aren't the best, there's only a couple of stages and they don't match well with the songs too much, some have a bit of a unique PV, but most don't. At least they didn't just use pictures of fan art on loop for a PV like they did in Project Diva 1.
