Coul calibur II had that sweet mode where you make a profile and it saves your profile/character/stats into a database and you fight other people's profiles in the arcade only game mode and the difficulty is based on how high rank that person's profile is and it is also advertised that the game saves their playstyle so it is like fighting them but that is mostly BS obviously

I actually just got back from Momocon 2016 in Atlanta, where Tokyo Attack was.
They had pop'n music, DDR, sound voltex, IIDX, jubeat, groove coaster, music gun gun, future tom tom, in the groove 2, taiko, along with initial D cabs, the bishi bashi, and some sit down jamma fighting cabinets.
That shit was fucking off the chain, holy shit

How does IIDX and jubeat work without that dumb card system? I had to have an arcade attendant, who couldn't speak english, help me setting up a IIDX account when i went to japan a few years ago.

The newer mixes on most Bemani machines require an E-amuse network connection before they will even boot, but the good people on sows offer an alternative to people like the guys who run Tokyo Attack, which is a local server which allows the cabinets to boot without actually being connected to konamis official server.
At Momocon, he had all of the cabinets set to guest mode, meaning that people could play without having to register for a card, not that you could use one anyway, I dont think.

I remember thinking Cenipede was the shit growing up. That's about all that comes to mind though, everything else I can think of my arcade had were more "analog" things like skeeball, spider stomp etc. or racing games that I ignored back then. And I've never really delved much into arcade emulation either.
Magical Drop 3 is pretty fun I guess? It's the only other thing that comes to mind.

Disregarding Fighting games, it has to be this. Played this shit a few times in an arcade while the gyroscope still worked and it was amazing. Afterburner and AB II are two of my favorite classic games.
After that, Deadstorm Pirates. Fantastic rail shooter that you can viably have three people play for the price of two if you have a third guy just to work the wheel.

I finally got to witness that cabinet in its full glory recently at the Jay St Video Games in Colony Mall. The quality/degradation of the two screens was noticeable, but it was still a site to behold. It only required a quarter to play as well, which was awesome. I hope they didn't sell it yet.
