Worldbuilding. Morrowind completely feels like an alien world. There are aesthetics you never find in other games, like people living in mushrooms. It's one of the only RPGs where all the made up words they use slot right in instead of sounding like someone trying to ape Tolkein and not getting why his conlangs worked. There's even an in-universe explanation for why caves are filled with random bandits who want to kill you. People just don't care about that kind of thing anymore.

by "streamlined" do you mean playable? because daggerfall's un-navigable randomly generated dungeons, literally impossible quests, and skills that don't do anything are not depth, they're just bad design
i am convinced most people who praise daggerfall haven't actually played it, they just read some of its features and imagined how good of a game they must make, without ever actually playing it to realise that they're all half-implemented and don't really work out. i wish i could take back the hundred or so hours i spent looking in that game for something that would tie it all together

might as well throw it in dosbox and see how clunky it is for yourself. but yeah, stuff like houses (the cities are massive so it's a pain in the ass find yours, and it's kind of silly to visit a city regularly), dynamic guilds (actually just really boring because the random quests in general usually suck) and standing trial for your crimes (just a skill check, not nearly as interesting as you imagine) don't really add anything, in fact they usually make it worse

I have played both Morrowind and Skyrim recently. With mods Skyrim has better gameplay (sadly the actual quests are shit but fan made quest, like Wheels of Lull, are really fucking good). But Morrowind has something unique about its atmosphere, have no idea what it is but Morrowind makes me feel like I'm on a legit adventure and it gives me tingles.
