I would say the two BB bosses are harder if that is what we are comparing, since both Gundyr fights can be made very trivial with parrying, where as the BB fights are designed around you being required to parry to stand a decent chance.
It's so ingrained into me at this point that I can easily take care of Champ with a very underleveled character, whereas I still need to rely on the NPC phantom glitch to take on dancer at that early

hm. champ's halberd is enormous, and his massive armor should make it impenetrable to his silver bullets, also his scythe should do much against it if we're being physically correct here. i mean, sure, gehrman could outrun him and flank him without a problem, but considering champs raw massive strength, i think this could be quite even, given that champ gets a few hits in. champ is also pretty damn fast so my bet would be on the champ.

Gehrman is disgustingly powerful and far faster. Gundyr genuinely is just unpredictable with his combos between slashs, shoulder tackles and kicks.
Gehrman has huge range because of the scythe, a constant shotgun barrage, an instant kill in his second phase, very fast despite being peg legged, huge damage and far larger health pool. (Champion Gundyr has 4950 HP, Gehrman has 14293 HP)
