I own just under 600 games on Steam, and my wishlist has just under 500 on it.
Most games on my wishlist are just games that looked interesting at the time, and might consider if they go on sale. I remove crap from it often.

Yes you can. You can now permanently remove games from your library.
Yes, *remove*, and not just hide:
Go to a game you don't want anyone in your Steam library, and click Support in the right-hand sidebar. Then you'll get the option to permanently remove it from your library, as if you've never owned or played it before.
Only caveat is that if a shitty game came in a bundle, you have to remove all the games in that bundle.
