The Origins didn't really matter until you reached that part of the game(slums, camp, ostagar, tower, noble bar) and even then they were confined to two or three interactions. A Witcher School is something that defines the characters behavior and fighting style fundamentally. You'd have to, basically, make 6 different protagonists with big and small differences in nearly every aspect of the character. That's too much, even for CDP.

The developers balance your Geralt. They put you at a level that's recommended for every player, with the necessary defense (armor), attack (swords), and etc. that they believe are sufficient to finish the DLC.
I wouldn't recommend doing this, unless you really want to play the DLC before you are at an adequate level in your own play-through.
