I remember Godanner has a really good episode following the pit crew but Godanner is literally CHEESECAKE WITH ROBOTS WITH EVERY FETISH PAIRING YOU COULD WANT
Dai-Guard is good as it's more of "what if a Business had to try and make a profit off fighting giant monsters with a giant robot" so you get a lot of salary man hijinks and problems caused by having your secret weapon be a giant robot on a budget that isn't allowed to use traditional weapons or it gets seized by the military.
I like Fafner because though all the robots do run on ALIEN MAGIC, they at least stay consistent with their rules and you grow to know a lot of the support staff.
Votoms is fun because all the robots are just giant metal death traps, and Chirico is a cool guy but his plot armor is literally the plot of the show.

Not sure how far in you are, but I think if you made the gameplay kind of like Binding of Isaac minus the memes mixed with the Zelda elements you were thinking of it'd be pretty cool.

Maybe my area is a statistical anomaly but most of the college age and slightly older (and high school I'd assume) people I know are at the very least aware of KLK/AoT and maybe a few others in terms of modern stuff.
