As for why we fight champion gundyr there and if it means a single thing at all I'm not sure. on one hand killing gundyr in the past should mean he's never there to be unanimated in the present nor have one of those pus of man on his back, but the handmaiden remembering you and ludleth knowing fully where the firekeepers eyes came from..???

I'm not convinced Untended is actually the past, it makes more sense for it to just be the remains of a previous Firelink shrine. Iudex isn't the real Gundyr since he doesn't leave a soul, and the Queen of Lothric visits Untended and is presumably not time travelling. As for the handmaiden, I guess she's just a time travelling super bitch.
