If this wasn't a game but the books, Geralt, and Witchers in general, would be basically day laborer monster hunters. Undying is great with bear armor, think about it it needs adrenaline points but bear armor generates adrenaline points. Shouldn't die much at all if you run an ekhidna decoction + undying.

No. As in traditional Witcher fashion, Geralt worked for some dude and demanded his firstborn as payment. Given that Witchers are sterile and need to be trained and introduced to mutagens from a very young age, this is how they maintain their order.
