You do realise that the game is trying to be incomprehensible, right? You do realise they have incomprehensible, undying beasts roaming around?
The actual stories in Souls games often take place before some corrupting, incomprehensible power takes control of humanity, which is when the player enters.

The story is simply too extensive to recap in a single post. It is however the best story told in vidya since Half-Life 1 (from which it clearly draws inspiration).

Miyaaki loves Lovrecraftian storytelling (i dont know if other authors use this kind of narrative resource) where you're supposed to be engaged with the storytelling, you're supposed to fill the blanks with your own creativity.

Not really.
A long time ago, a college known as Byrgenwerth discovers sacred blood in the ancient tombs. A great city called Yharnam is built on top of these tombs, and becomes prosperous of the miraculous healing abilities from the sacred blood.
Some time later the blood starts affecting the citizens and turning them into beasts. Groups known as the Hunters are formed within the church and other places. They hunt down the beasts every night.
Kos' corpse washes up on the coast of a nearby fishing village and Byrgenwerth and its hunters go and investigate it. They commit atrocities to the corpse, the townsfolk and the region in general, which results in the Orphan cursing the hunters. This makes it so that hunters who become drunk with blood end up in the hunters nightmare, a kind of "hell" for them.
Laurence, Gehrman and their "associates" beckon the Moon Presence which results in the Hunters Dream, a safe haven for the hunters. Time passes and only hunter can enter it at a time, guided by Gehrman and the Doll.
Meanwhile, Yharnam becomes even more fucked up since hunters are becoming more scarce by the minute and bigger beasts start roaming the streets.
You wake up in Yharnam, are given sacred blood and a task to seek paleblood. The MP manipulates you to strive towards killing Mergo
You eventually kill Rom and expose the true nature of things, with the blood moon and other things Rom was hiding.
You eventually kill Mergo, and the nightmare ends for you in 3 ways
Gehrman cuts your ties to the dream and thats that.
You kill Gehrman and the MP enslaves you to be a new mentor for new hunters
You kill the MP and ascend to godhood, something many people have tried to do before you.
Its not a complex story but theres a lot of details in it, sure.
