Combat Enhanced is fun but it definitely makes the game too easy. If I remember, enemies can't use any of the special features. Slowing down time and using combos lets you kill anyone even at level 1.
I remember doing wacky stuff like silencing mages with short blades and poking eyes out with hand to hand.

Have you played TrainWiz's mods? They add a ton of late game content and are actually generally really good.
Also once I ran a game with a companion mod (CM partners I think) where I picked up a companion and just raised restoration, illusion, mysticism, enchanting, alteration, that kinda stuff. Was fun as hell. Different kind of gameplay. Protect the companion and gear them with good stuff. Paralyze enemies and stay out of the way, make custom spells like an on-target flash healing spell, a super long duration weak regen spell on touch, an on-target invis spell with a large AoE so as to invis all my companions and (and self cast on myself after) before moving in to a fight, whenever I happened to have 2 companions on me.

TrainWiz's mods add end game content that's really fun and interesting. You can find trailers for them in fact, on youtube.
There are lots of interesting mods out there.
There are the vampire mods:
Vampire Embrace, Vampire Realism II, and Vampiric Hunger. All are tweakable, and have compatible so long as you get VR's patches for VE and VH. They enhance the vampire experience. They let you make NPCs into cattle, thrall, or vampire followers. Lets you modify a lot of things like how people react to you being vampire, sun damage, shrine damage, how often to food, powerups for being an old vampire, etc.
There are the telvanni mods. They really enhance the Telvanni experience once you get into the high ranks. I believe they were

There are only two that I know of and one of them isn't really a sex mod.
Mr Cellophane's Lovers and Legends is the main one. It involves coupling with an NPC, then using a rose to summon them before starting a sex scene. Sex scenes are simple single thrust animations that reverse themselves and then thrust again on command. Setting up this mod is INSANELY TIME CONSUMING and frustrating as hell because it can fail for any little random thing like the better beast races neck seam fix esp FOR SOME FUCKING REASON. When you set it up you have to go through this enormously time consuming process which can suddenly fail and you lose your 40 minutes of waiting and have to diagnose the issue then try again if you can even figure it out. Worst of all it's incredibly unstable. It can crash when you try to use it in game. It's the only real Morrowind sex mod.
Then there's the romance mod. It was never finished, at least in English. A french mod ported and abandoned. It involves getting in a relationship with and then marrying an NPC over a long period of time. Once married, you can enter a sex scene that is nothing more than teleporting to a bedroom, undressing, then fade to black. Pregnancy included.
There is a mod that connects both mods LaL and Romance, and when it works, great, but it makes the already unstable LaL even MORE unstable and can fuck up the Romance functionality in all sorts of ways.
Stick to Oblivion's Lovers with PK or Skyrim's SexLab for sex mods.

It's fun. The miss rate is a bitch though. A little bit of marksman on the side may result in more missing than you'd like. Maybe you can mod in or enchant an item like a ring that gives you +20~30 marksman or something, or some agility. Alternately you can use a mod with a powerful crossbow to make up for the missing. Maybe that onehunting rifle mod with cool rifle sound effects
