I'd say they're all about the same. It's kind of subjective, because for most of these characters they only "lose" when they lose hope and go hollow or otherwise insane.
If we want to compare them based on game mechanics in a one off duel, the protag of Demon's Souls is likely the strongest simply because he can carry 99 of multiple different types of healing items, and he can do so legitimately.

Dark souls 3 protag is stronger than ds2 or ds1 protag. Ashen one basically kills the four lords and the chosen undead all in one.
They all literally kill gods but ashen one killed multiple gods and god killers combine into one ultimate boss.
Slayer of Demons slayed an Old One. While the Hunter was cool, he doesn't become very powerful from gaining blood, even if he becomes a Great One himself. The other heroes are all basically immortal, but seeing the Hunter "wake up" makes you realize that he's the strongest person in a plane of reality that isn't even the real one. Who knows how powerful the Hunter really is.
Bearer of Curse is powerful because the fucker carries the whole "I don't need to link the flame" choice, while others only had the choice of accepting the job, becoming evil, or quitting. It's like a trump card against destiny.
All of the main Dark Souls protags are powerful because of the Dark Soul, which makes them like a god themselves from the start.

Hollow means something else for Gods than it does for humans. Nameless King wasn't hollowed because Gods don't hollow. The reason why he and Gwyn looked like beef Jerky is because the Lord Soul Gwyn found was pretty much dead. It says in DS1 that Gwyn divided up his Lord Soul between his children, which is were Nameless King's power comes from. The original state of Gods are those Hollow looking things in the DS1 opening cinematic. Through the Lord Soul they were able to change their appearance. Now that the Lord Soul is dying out, they are starting to look like zombies again.

Old Hunter = Demon Slayer > Bearer of the Curse > Ashen One > Chosen Undead
Old Hunter slays cosmic deities with ease, although admittedly it's only the weak ones and their weakened versions.
Demon Slayer canonically became the strongest, or second strongest demon in the entire universe. It's hard to say how these two would measure up.
Out of the three Dark Souls games, I put Bearer at the top because he's effectively immortal now in addition to slaying all of the guys who had the old Lord Souls, which means he is at least stronger than Chosen Undead with probably unlimited potential unless the DaS3 DLC cucks him. Ashen One beats the Soul of Cinder which includes not only Gwyn's form but the Chosen Undead's as well. I'll admit that the Soul could be weakened at this point, but I still feel that Ashen One is stronger.
Ashen one either takes the source of all power or makes absolutely sure it gets snuffed out under his supervision in 3 out of 4 cases. Since this is supposed to be the end of Lordran's continuity for the foreseeable future, buffing himself AFTER killing all the old gods is probably the Canon ending.

Honestly, it's probably the bearer of the curse. He fought all his enemies in their prime, unlike Chosen or Ashen, and he fought some pretty strong fuckers.
Next would either be Slayer or Hunter, it's hard to say. It's hard to get an idea on exactly how strong the old ones are in Bloodborne compared to the Souls casts, but I think I'd still put him at or above Slayer's level.
After than, it's Chosen and then Ashen. Ashen had the most worn down, fading, crippled people to fight, even more so than the enemies Chosen did. He's canonically the weakest, in my opinion.

Slayer of demons just didn't fight enemies anywhere near the level of the highest end souls+BB enemies, his enemies are all physical monsters strong humans (Biorr) can fight

Yhorm has an absolutely crippling weakness which makes him most certainly *not* the strongest. Hell, even Siegward was able to put quite the dent in him. With just a small band of adventurers(granted they could get past the gargoyles and white jailers), it would be a cinch.

I don't see him doing shit to the other Lords of Cinder, except Abyss Watchers.
