Crash or Spyro would be perfectly fine as long as they don't try to do any gimmicky bullshit and push the gave further down in the hole. I'm confident that either of them would get 100%+ ROI because they're probably simple to make by today's standards and has a huge fan base. They could pull it off as long as they don't put a $60 price tag on it.
The main concern that I have is that platformers are largely a dead genre so the new generation of gamers that these companies are trying to appeal to might be too spoiled to appreciate (or buy) a simple platformer and sales would flop, which is probably the main reason why nobody's doing it already.
