Is there a good beginner's guide to dwarf fortress?
Just something that explains the rules and mechanics of the game. Doesn't need to have any real strategic info or tips beyond that.
I personally watched a video series by a dude named 5ippycup on youtube. He uses and recommends a tile pack, so some people might have a problem with that, but he'll teach you the basics at least.

is that possible? I usually like to play games as blind as possible but my understanding is that the game lacks a lot of explanation found in modern/commercial releases and expects you to know things just to play it like you read the manual

The quick start guide that was posted should be good enough for you.
Nothing wrong with using a tileset. At the very least, if you want to stick with the ASCII route, use a square font and a different color scheme. The default font and color.txt are horrendous and will give you eye strain.
The only downside to graphical tilesets is they usually aren't made for adventure mode, so some things will look strange in it.

Jump in have the wiki open. Metals and military info, smelting, crafting, animal care, etc. It's not a complicated game, just lots of shit you might be interested in knowing.

Also, head over to the page on /vg/ for third party programs to help manage shit. It's a lot to handle when you don't know what's what and you have 40 dwarves shitting on their asses suckin' themselves off.
