So I just finished the HD collection of Yakuza 1&2. Both games are masterpieces but the second game just takes it to a whole new level.
What should I expect from the rest of the series? Should I just play 3 next or any of the spin-offs?

Kenzan, Black Panther and Ishin are spinoffs and aren't in English though.
Seeing as you played the HD collection though I assume you know Japanese so you might want to play Kenzan now as it came out before Y3.

No, Kenzan is set in Japan medieval and Ishin in Victorian-era Japan.
Black Panther is by the Fight Club devs (whom are Japanese, contrary to what most people think) and it's a PSP spinoff set in Kamurocho with different protag. There's a sequel as well.
Kiwami adds A TON of new shit and is very much worth playing but only play it after 0, and 0 is best played after 5.

Okay neat, this is all pretty straight forward. So pretty much keep Kiwami for when I miss the first game waiting for Yakuza 6 or something. Going to be a long while before I play that since I don't even have a PS4.

Storywise they go downhill after 2, but they're all still great games

Definitely worth it to play them all if you considered 1 a masterpiece too. 3's probably the weakest of them all, so that might be a bit of a hurtle.
After you finish 5, give Ishin a go too. That one's a Meiji era japan spinoff and introduces a lot of stuff that carried over into 0 and Kiwami. All around more smooth, and combat styles you can swap between mid-fight.
Black Panther is neat too. Might take a bit to get into, but it's basically Def Jam meets Yakuza. Oddly enough, it has a live action TV drama adapted to it's story too.
